Recipe

Daube de Boeuf Provençale (Provençal Beef Stew)

Ingredients:

  • 1kg beef chuck, cubed
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 500ml red wine
  • 1 bay leaf
  • 1 sprig thyme
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. In a heavy pot, heat olive oil and brown the beef cubes.
  2. Add onions, garlic, and carrots; cook until softened.
  3. Stir in tomato paste, then add red wine, bay leaf, and thyme.
  4. Cover and simmer on low heat for 2–3 hours, until the beef is tender.
  5. Season with salt and pepper and serve hot with crusty bread or potatoes.
