Daube Provençale (Provençal Beef Stew)
Ingredients:
- 1kg beef chuck, cut into cubes
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 250ml red wine (Syrah preferred)
- 1 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- Olive oil, for browning
- Salt and pepper, to taste
Instructions:
- In a large pot, heat olive oil and brown the beef cubes in batches. Set aside.
- In the same pot, sauté onion, carrots, and garlic until softened.
- Stir in tomato paste, then return the beef to the pot. Add red wine, bay leaves, thyme, salt, and pepper.
- Bring to a simmer, cover, and cook over low heat for 2–3 hours until meat is tender.
- Serve hot with crusty bread and a glass of Crozes-Hermitage 'Labaya' Syrah for a true Rhône experience.
