Recipe

Caillette de la Drôme (Herb Pork Terrine)

Ingredients:

  • 500g pork shoulder, finely chopped
  • 200g spinach or Swiss chard, blanched and chopped
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tbsp breadcrumbs
  • 1 tbsp fresh thyme
  • Salt and pepper, to taste
  • Caul fat (optional, for wrapping)

Instructions:

  1. Preheat oven to 180°C. Mix pork, greens, onion, garlic, egg, breadcrumbs, thyme, salt, and pepper in a bowl.
  2. Shape into balls or mini loaves and wrap with caul fat if using.
  3. Place in a baking dish and roast for 35–40 minutes until golden and cooked through.
  4. Serve warm or at room temperature with crusty bread and a glass of Domaine Yves Cuilleron Saint Joseph 'Les Serines'.
