Caillette de la Drôme (Herb Pork Terrine)
Ingredients:
- 500g pork shoulder, finely chopped
- 200g spinach or Swiss chard, blanched and chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 egg
- 1 tbsp breadcrumbs
- 1 tbsp fresh thyme
- Salt and pepper, to taste
- Caul fat (optional, for wrapping)
Instructions:
- Preheat oven to 180°C. Mix pork, greens, onion, garlic, egg, breadcrumbs, thyme, salt, and pepper in a bowl.
- Shape into balls or mini loaves and wrap with caul fat if using.
- Place in a baking dish and roast for 35–40 minutes until golden and cooked through.
- Serve warm or at room temperature with crusty bread and a glass of Domaine Yves Cuilleron Saint Joseph 'Les Serines'.
