Daube de Boeuf à la Provençale (Provencal Beef Stew)
Ingredients:
- 1kg beef chuck, cubed
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves
- 2 tbsp tomato paste
- 500mL red wine
- 1 bouquet garni
- 2 tbsp olive oil
- Salt and pepper
Instructions:
- Marinate beef overnight with wine, garlic, and bouquet garni.
- Drain and reserve marinade. Brown beef in olive oil, then add vegetables and tomato paste.
- Return marinade to the pot, bring to a simmer, cover, and cook for 2.5–3 hours until tender.
- Adjust seasoning and serve with crusty bread and a glass of Domaine Yves Cuilleron Syrah IGP 2023.
