Steak au Poivre (Peppercorn-Crusted Steak with Red Wine Jus)
Ingredients:
- 4 sirloin or ribeye steaks
- 2 tbsp crushed black peppercorns
- 2 tbsp butter
- 1 shallot, finely chopped
- 150ml red wine
- 150ml beef stock
- 1 thyme sprig
- Salt and pepper
Instructions:
- Season the steaks generously with salt and press the crushed peppercorns onto both sides.
- Heat butter in a pan and sear the steaks on high heat until cooked to your liking, then set aside to rest.
- Sauté the shallot in the same pan until softened.
- Add the red wine, stock and thyme, then simmer until reduced to a glossy jus.
- Slice the rested steaks and spoon the warm jus over the top before serving.
The peppercorn crust elevates the Syrah’s natural spice, while the red wine jus deepens the wine’s dark berry and floral notes, creating a classic northern Rhône pairing.
