Gratin de Fenouil (Fennel Gratin)
Ingredients:
- 2 large fennel bulbs, sliced
- 1 tbsp olive oil
- 100mL cream
- 50g grated Gruyère cheese
- 1 garlic clove, minced
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions:
- Preheat oven to 190°C. Lightly oil a baking dish.
- Blanch sliced fennel in boiling water for 5 minutes, then drain.
- Layer fennel in the baking dish, sprinkle with garlic, salt, and pepper.
- Pour over cream and top with grated cheese.
- Bake for 25–30 minutes until golden and bubbly. Garnish with thyme and serve warm alongside Domaine Yves Cuilleron Viognier.
