Dormilona Aka 2025

Dormilona Aka is a Margaret River red blend of Shiraz, Tempranillo and Cabernet Sauvignon.

All three varieties are hand harvested at Yungarra, the Yallingup vineyard Jo Perry farms with her partner Jim, and they come in at different times, so the blend is assembled from separate ferments. Tempranillo arrived first, was destemmed, sat on skins overnight and went to tank. Shiraz and Cabernet came in together and were given two nights on skins in open fermenters before pressing off to tank for a cold fermentation and a natural malolactic. From there the wine was simply racked, blended and bottled, with no oak and nothing added to get between the fruit and the glass.

This is a red for drinking cold. Dark cherry, plum skin and a pepper-and-dried-herb lift, with juicy acidity and almost no tannin to speak of. Half an hour in the fridge and pour at 13 to 14 degrees. Good with grilled chorizo, pizza, or a burger.
