Dormilona Cabernet Sauvignon 2024

Dormilona Cabernet Sauvignon is a single-vineyard Margaret River Cabernet from Yungarra Estate.

Viticulture explains this wine. On the high ground at Yungarra, one of the better lookouts in the region, the vines are pruned back hard to a single bunch per shoot, and the canopy is left thick enough to shade the fruit properly. The result is small, tight berries that Jo Perry likens to black caviar. Those berries macerated on skins in concrete eggs for six weeks, then were basket-pressed to tank to settle before going to barrel. Bottling waited until May 2025, and that extra time in wood has taken the hard edges off a densely packed vintage.

Dark, firm fruit, with blackberry, cassis and a savoury note of dried olive, and tannin that is fine-grained and persistent. Decant it and serve at 17 degrees. It calls for red meat: butterflied lamb, a rib eye, or beef short ribs with a bitter green salad.
