Dormilona Chenin Blanc 2025

Dormilona Chenin Blanc is a dry Margaret River Chenin Blanc from Yungarra Estate in Yallingup.

The Chenin block at Yungarra faces north on a gravelly limestone base, and it is trained on a lyre system that splays the canopy outwards, letting dappled light through to the fruit instead of full sun. That filtered light protects the bunches through a hot Margaret River summer and lets flavour build slowly. Grapes were hand harvested and whole-bunch pressed into a mix of amphora, puncheon and barrel, then left there until blending and bottling. Chenin is a variety Western Australia has quietly been good at for decades, usually in the Swan Valley, and this is a cooler, coastal reading of it.

Quince, green apple and a dab of honey over a firm, dry line of acidity, with texture from the time in clay and wood. Drink it at 10 to 11 degrees. Try it with roast pork, a chicken and fennel salad, or something spicy and Vietnamese.
