Dormilona Magic Carpet Pet Nat 2024

Dormilona Magic Carpet is a bottle-fermented sparkling Chenin Blanc from the Swan Valley.

The fruit for this one comes from outside Margaret River entirely: mature Chenin Blanc vines in sandy gravel at Pinelli Estate, in the middle of the Swan Valley, where the variety has been grown well for generations. It is picked by hand and pressed as whole bunches to tank for a cool fermentation, then hand bottled with a touch of sugar still to go and sealed, so the fizz builds in bottle. That is the whole method, with no disgorging, no dosage and no filtration. It is the loudest and most cheerful wine in the range.

Cloudy, dry and lightly frothing, with pear, lemon and a yeasty bite. Get it properly cold, 6 degrees, and open it slowly. It is hard to beat with fish and chips, fried chicken, a bowl of olives, or a hot afternoon and no food at all.
