Dormilona Magic Carpet Pet Nat 2025

Dormilona Magic Carpet is a dry pét-nat made from Swan Valley Chenin Blanc.

A sandy-clay site in the Swan Valley supplies all the fruit, and the 2025 season there was kind: a long, cool start to summer brought even ripening and very little disease pressure, which counts for a wine with nothing added to it. The grapes were hand harvested and whole-bunch pressed into tank, where they fermented on wild yeast. Once the sugar reached the level wanted, the wine was chilled to stop the ferment, then hand bottled to finish its second fermentation under seal. The Swan Valley is one of the country's oldest wine districts and Chenin has always been at home there.

Expect a gentle, slightly cloudy fizz, green apple and lemon, and a dry, savoury finish with a faint yeasty tang. Six to eight degrees, and chill it well before opening. Drink it with oysters, dumplings, a ham and cheese toastie, or salted almonds.
