Dormilona Tinto 2025

Dormilona Tinto is a Margaret River Shiraz grown organically at Yungarra Estate.

How the fruit went into the tank matters here. Whole bunches were tipped into the bottom half, then the rest of the crop was destemmed and poured on top, so the base of the ferment works semi-carbonically while the top behaves like a conventional red. Ten days on skins was enough, after which the wine was pressed to tank to finish fermenting and go through malolactic, then racked and bottled. All the Shiraz is hand harvested from the organic blocks at Yungarra, on the ridge above Yallingup. The result has more punch than earlier releases without losing the style.

Juicy and peppery, with blood plum, dried herbs and a lick of salt, tannins soft and the finish clean. Serve at 14 to 15 degrees, lightly chilled. Good with lamb skewers, a mushroom pizza, grilled chicken thighs, or a plate of salumi.
