Equipo Navazos La Bota 106 is a Vinagre de Jerez Gran Reserva bottled undiluted from a single very old cask, 1,200 half-bottles in all.
Sherry vinegar is made in Jerez by the same criaderas y solera system as the wines, from Palomino-based sherry left to acetify and then age for years in oak. Antonio Páez Lobato, known in the region as the king of vinegar, assembled soleras from houses including Sandeman, González Byass and Osborne, put the product on the international map and was instrumental in winning it a Denominación de Origen. Equipo Navazos long considered bottling one of the very old casks that his house, Páez Morilla, still cellars. In June 2021 they drew a saca from a single old butt: the base wine was already almost fifteen years old, with perhaps another forty years of ageing on top. Acidity sits above 11 degrees and around 3.5% alcohol remains. Vinegar of this concentration is normally used to lift younger blends; this is bottled as it came.
Use it a few drops at a time rather than as a table vinegar: over grilled vegetables, oysters, a consommé or a piece of aged cheese. Store upright in a cool, dark cupboard.
