Thai Green Curry
Ingredients:
- 2 tbsp green curry paste
- 1 can (400mL) coconut milk
- 1 cup mixed vegetables (e.g., zucchini, eggplant, bell peppers)
- 200g tofu or chicken, cubed
- 2 tbsp vegetable oil
- 1 tbsp fish sauce (optional)
- 1 tsp sugar
- Fresh basil and lime wedges, for garnish
Instructions:
- Heat oil in a pan. Add curry paste and sauté until fragrant.
- Stir in coconut milk and bring to a simmer.
- Add vegetables and tofu or chicken. Cook until tender.
- Season with fish sauce and sugar. Simmer for 2–3 minutes.
- Garnish with fresh basil and serve with steamed rice.
Tip: Adjust spice level by adding more or less curry paste.
