Asparagus Tart
Ingredients:
- 1 sheet puff pastry
- 1 bunch asparagus, trimmed
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 200°C. Roll out puff pastry on a baking sheet.
- Spread ricotta cheese evenly over the pastry, leaving a border around the edges.
- Arrange asparagus on top of the ricotta. Sprinkle with Parmesan, olive oil, salt, and pepper.
- Brush the edges of the pastry with beaten egg.
- Bake for 20–25 minutes until golden and crisp. Serve warm.
Tip: Garnish with fresh thyme for added flavour.
