Famille Hugel Riesling Classic is a benchmark expression of Alsace Riesling from one of the region’s most respected family estates, Famille Hugel, based in Riquewihr since 1639.
Riesling is widely regarded as Alsace’s most noble grape, prized for its ability to express site, climate and precision. Hugel’s Classic cuvée is made exclusively from estate and partner vineyards, with a focus on restraint, clarity and long-term consistency rather than overt richness.
Grown in the cool, dry climate of Alsace, this is a resolutely dry style, shaped by limestone and marl soils and crafted using Hugel’s minimal-intervention approach. It represents the house’s purest, most traditional expression of Alsace Riesling - linear, elegant and built for the table.

Spätzle aux Champignons (Alsatian Spätzle with Creamy Mushrooms)
Ingredients:
- 400g fresh spätzle (or dried spätzle pasta or similar)
- 300g mushrooms (button, cremini or wild mix), sliced
- 2 tbsp butter
- 1 small onion or shallot, finely chopped
- 150ml dry white wine (Alsace-style)
- 150ml crème fraîche or thickened cream
- Fresh parsley, chopped
- Salt and cracked white pepper
Instructions:
- Cook the spätzle in salted boiling water until tender, then drain and set aside.
- Melt the butter in a wide pan and gently sauté the onion until soft and translucent.
- Add the mushrooms and cook until lightly golden and their moisture has evaporated.
- Pour in the white wine and allow it to reduce slightly.
- Stir in the cream and simmer gently until the sauce thickens.
- Add the cooked spätzle to the pan and toss to coat evenly.
- Season with salt and white pepper, finish with chopped parsley and serve immediately.
The earthy mushrooms and creamy sauce highlight Riesling’s mineral structure, while the wine’s acidity keeps the dish lifted, precise and beautifully balanced.
