Herb-Roasted Chicken
Ingredients:
- 1 whole chicken (approx. 1.5kg)
- 2 tbsp olive oil
- 1 lemon, halved
- 4 garlic cloves, crushed
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper, to taste
Instructions:
- Preheat oven to 190°C. Rub the chicken with olive oil, salt, pepper, rosemary, and thyme.
- Place lemon halves and garlic inside the chicken cavity.
- Roast the chicken in a baking dish for 1 hour 20 minutes, or until the juices run clear.
- Let the chicken rest for 10 minutes before carving.
