Recipe

Herb-Roasted Chicken

Ingredients:

  • 1 whole chicken (approx. 1.5kg)
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 190°C. Rub the chicken with olive oil, salt, pepper, rosemary, and thyme.
  2. Place lemon halves and garlic inside the chicken cavity.
  3. Roast the chicken in a baking dish for 1 hour 20 minutes, or until the juices run clear.
  4. Let the chicken rest for 10 minutes before carving.

Tip: Serve with roasted vegetables and a side of gravy.
