Truite Meunière aux Amandes (Trout with Almond Butter Sauce)
This classic Rhône Valley dish features pan-fried trout with a delicate almond and butter sauce. The bright acidity and floral, citrus, and stone fruit notes of this Côtes du Rhône Blanc beautifully complement the buttery richness of the dish while enhancing the nuttiness of the almonds.
Ingredients (Serves 4):
- 4 trout fillets, skin-on
- 50g plain flour, for dredging
- Salt and freshly ground white pepper, to taste
- 3 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 50g sliced almonds
- 1 lemon, juice and zest
- 2 tbsp chopped fresh parsley
- Steamed green beans or a green salad, for serving
Instructions:
- Prepare the Fish: Pat the trout fillets dry and season with salt and white pepper. Lightly dredge in flour, shaking off excess.
- Pan-Fry the Trout: Heat the olive oil and 1 tbsp of butter in a large pan over medium heat. Place the trout fillets skin-side down and cook for 3-4 minutes until golden and crispy. Flip and cook for another 2 minutes. Transfer to a plate.
- Make the Almond Butter Sauce: In the same pan, melt the remaining butter over low heat. Add the almonds and toast until golden brown.
- Finish the Sauce: Stir in the lemon juice and zest, then pour the sauce over the trout fillets.
- Serve: Garnish with fresh parsley and serve immediately with steamed green beans or a crisp green salad.
