Braised Short Ribs
Ingredients:
- 1kg beef short ribs
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef stock
- 1 can crushed tomatoes
- 2 sprigs fresh rosemary
- Salt and pepper, to taste
Instructions:
- Season short ribs with salt and pepper. Sear in olive oil until browned on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and garlic until softened.
- Deglaze with red wine, then add beef stock, tomatoes, and rosemary.
- Return short ribs to the pot, cover, and simmer on low heat for 2.5–3 hours, until tender.
- Serve over mashed potatoes or polenta.
