Recipe

Braised Short Ribs

Ingredients:

  • 1kg beef short ribs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef stock
  • 1 can crushed tomatoes
  • 2 sprigs fresh rosemary
  • Salt and pepper, to taste

Instructions:

  1. Season short ribs with salt and pepper. Sear in olive oil until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and garlic until softened.
  3. Deglaze with red wine, then add beef stock, tomatoes, and rosemary.
  4. Return short ribs to the pot, cover, and simmer on low heat for 2.5–3 hours, until tender.
  5. Serve over mashed potatoes or polenta.
