Recipe

Risotto al Limone e Erbe (Lemon & Herb Risotto)

Ingredients:

  • 1 1/2 cups Arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken stock, kept warm
  • 1/2 cup dry white wine
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pan over medium heat. Add onion and garlic and sauté until soft and translucent.
  2. Add the Arborio rice and toast for 1-2 minutes until lightly golden.
  3. Pour in the white wine and stir until fully absorbed.
  4. Add stock, one ladle at a time, stirring constantly and allowing the rice to absorb the liquid before adding more.
  5. Once the rice is al dente and creamy, remove from heat. Stir in butter, Parmigiano, lemon zest, and parsley. Season with salt and pepper.
  6. Serve immediately alongside a glass of Fattoria Le Pupille Poggio Argentato Toscano Bianco 2018 for a crisp, mineral-driven pairing that highlights the wine's elegance and complexity.
