Risotto al Limone e Erbe (Lemon & Herb Risotto)
Ingredients:
- 1 1/2 cups Arborio rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken stock, kept warm
- 1/2 cup dry white wine
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1/2 cup freshly grated Parmigiano-Reggiano
- Zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pan over medium heat. Add onion and garlic and sauté until soft and translucent.
- Add the Arborio rice and toast for 1-2 minutes until lightly golden.
- Pour in the white wine and stir until fully absorbed.
- Add stock, one ladle at a time, stirring constantly and allowing the rice to absorb the liquid before adding more.
- Once the rice is al dente and creamy, remove from heat. Stir in butter, Parmigiano, lemon zest, and parsley. Season with salt and pepper.
