Risotto alle Fragole (Serves 4)

Risotto alle Fragole is an unusual but delightful Italian risotto featuring strawberries, balancing the sweetness of fruit with the creaminess of risotto.

Ingredients:

  • 300g Arborio rice
  • 200g fresh strawberries, chopped
  • 1 small onion, finely chopped
  • 750ml vegetable broth, warmed
  • 100ml dry white wine
  • 50g butter
  • 50g grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Sauté Onion: In a large pan, melt half the butter and sauté the onion until translucent.
  2. Add Rice and Wine: Add Arborio rice, stirring to coat in butter, then pour in white wine. Let it evaporate.
  3. Add Broth and Strawberries: Add broth one ladle at a time, stirring continuously until absorbed. Add strawberries halfway through cooking.
  4. Finish: Stir in remaining butter and Parmesan, seasoning with salt and pepper.
