Tarte à la Ratatouille (Ratatouille Tart)
Ingredients:
- 1 sheet puff pastry
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 tomato, sliced
- 1 red capsicum, roasted and sliced
- 2 tbsp olive oil
- 1 tsp herbes de Provence
- Salt and pepper, to taste
Instructions:
- Preheat oven to 200°C. Roll out puff pastry on a lined baking tray.
- Layer vegetables over the pastry and drizzle with olive oil.
- Sprinkle with herbes de Provence, salt, and pepper.
- Bake for 25–30 minutes until pastry is golden and vegetables are tender.
