Pappa al Pomodoro (Tuscan Tomato Bread Soup)
Ingredients:
- 400g stale bread, torn into pieces
- 500g ripe tomatoes, chopped
- 2 cloves garlic, minced
- 750ml vegetable broth
- Fresh basil, torn
- 4 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- In a large pot, sauté garlic in olive oil. Add tomatoes and cook until softened.
- Add the torn bread and vegetable broth. Stir and cook over low heat until thick and soft.
- Season with salt and pepper, then stir in fresh basil.
- Drizzle with extra virgin olive oil before serving.
