Pici al Ragù Toscano (Pici Pasta with Tuscan Meat Sauce)
Ingredients:
- 400g pici pasta
- 500g minced beef or pork
- 1 onion, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 400g canned tomatoes
- 1 glass red wine
- Olive oil, rosemary, salt and pepper
Instructions:
- In a pan, sauté onion, carrot, and celery in olive oil until soft.
- Add minced meat and brown. Deglaze with red wine and reduce.
- Add tomatoes and rosemary. Simmer for 1.5 hours until thick.
- Cook pici until al dente and toss with the sauce.
- Serve with grated pecorino and a glass of Fontodi Chianti Classico.
