Crostini Toscani (Tuscan Chicken Liver Pâté Crostini)
Ingredients:
- 200g chicken livers, cleaned
- 1 small onion, finely chopped
- 2 tbsp capers
- 4 anchovy fillets
- 3 tbsp olive oil
- 50mL white wine
- Salt and pepper, to taste
- Sliced baguette or Tuscan bread, toasted
Instructions:
- Heat olive oil in a pan and cook onion until soft. Add anchovies and capers, cooking until anchovies dissolve.
- Add chicken livers and cook for 5–7 minutes, until browned. Pour in wine and simmer until reduced.
- Blend the mixture into a coarse paste. Season with salt and pepper.
- Spread onto toasted bread slices and serve warm.
- Pair with a glass of Fontodi Chianti Classico for an authentic Tuscan experience.
