Description

Lovely ruby colour in the glass with purple hues. On the nose, balsamic herbal aromas mingle with classic cherry, blackberry and tobacco notes. On the palate, Fontodi Dino is complex and expressive, with pronounced flavours of balsamic herbs, sweet tobacco and hints of cherry. Aged in amphorae, this 100% Sangiovese reveals purity and elegance with a long, persistent finish.

Winery

Fontodi is a certified organic winery in Panzano in Chianti, Tuscany, owned by the Manetti family since 1968. Known for their deep connection to the land and their craftsmanship, Fontodi blends innovation and tradition. 'Dino' is a unique amphora-aged Sangiovese that highlights the varietal's raw character and earthy elegance while honouring ancient winemaking techniques.

Recipe

Pappa al Pomodoro (Tuscan Tomato Bread Soup)

Ingredients:

  • 400g stale bread, torn
  • 500g ripe tomatoes, chopped
  • 2 cloves garlic, minced
  • 750ml vegetable broth
  • Fresh basil, torn
  • Olive oil, for drizzling
  • Salt and pepper, to taste

Instructions:

  1. In a pot, sauté garlic in olive oil. Add tomatoes and cook until softened.
  2. Add torn bread and broth. Stir well and simmer until thick and creamy.
  3. Season to taste and finish with basil and extra virgin olive oil.
  4. Serve warm with a glass of Fontodi Dino for a rustic Tuscan pairing.
