Crespelle ai Funghi Porcini (Crepes with Porcini Mushrooms)
Ingredients:
- 200g fresh porcini mushrooms (or rehydrated dried)
- 2 cloves garlic, minced
- 200ml béchamel sauce
- 100g ricotta cheese
- Fresh thyme, chopped
- 8 crepes (plain or savoury)
- Grated Parmigiano Reggiano
- Olive oil, salt and pepper
Instructions:
- Sauté garlic in olive oil, add mushrooms, thyme, salt and pepper. Cook until tender.
- Mix mushrooms with ricotta and a spoonful of béchamel.
- Fill each crepe with the mixture, roll and place in a baking dish.
- Top with béchamel and grated parmesan. Bake at 180°C for 20 minutes.
- Serve warm with a glass of Fontodi Pinot Nero Casa Via for a refined Tuscan match.
