Owned by the Manetti family since 1968, the winery is dedicated to sustainable farming and precise, terroir-driven winemaking. The 'Casa Via' label highlights small-production wines, such as this distinctive Syrah, that reflect innovation and varietal expression in Tuscany's diverse landscape.

Recipe

Spezzatino di Cinghiale (Tuscan Wild Boar Stew)

Ingredients:

  • 800g wild boar meat, cubed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 bottle red wine
  • 2 bay leaves
  • 2 sprigs rosemary
  • Olive oil, salt and pepper
  • 500g tomato passata

Instructions:

  1. Marinate the wild boar in red wine with garlic, bay leaves, and rosemary overnight.
  2. Drain and pat dry. Sear the meat in olive oil until browned.
  3. Sauté onion, carrot, and celery. Return meat to the pot and pour in fresh wine and tomato passata.
  4. Simmer gently for 2–3 hours until tender. Season with salt and pepper.
  5. Serve with crusty bread and a glass of Fontodi Syrah Casa Via for a bold Tuscan pairing.
