Forest Hill Vineyard Block 5 Cabernet Sauvignon 2023

Forest Hill Vineyard Block 5 Cabernet Sauvignon is a deep, finely structured cool-climate Cabernet from the heart of Western Australia's Great Southern.

This wine comes from a single block of Forest Hill's Mount Barker vineyard, a site first planted in the mid-1960s and among the oldest in the region. The gravelly, ironstone-rich soils and long, cool ripening season allow Cabernet to build flavour while keeping its freshness. The 2023 is described as dark and saturated, with blackberry, cherry, violets and a hint of vanilla pod, followed by a long, deeply flavoured palate and fine tannins carrying an ironstone and graphite line.

Give it an hour in a decanter, then serve at around 17 degrees with slow-roasted lamb shoulder, venison or a rib-eye. It has the structure to age for many years.
