Forest Hill Vineyard Block 5 Cabernet Sauvignon is a single-block Cabernet of real depth from Mount Barker in Western Australia.

Forest Hill was one of the Great Southern's founding vineyards, and Block 5 is a small parcel within it that the winery bottles on its own. The cool climate, tempered by the Southern Ocean, stretches out the ripening season, giving Cabernet dark fruit and floral lift together with fine, firm tannins. The supplier describes saturated blackberry and cherry fruit, violets and a touch of vanilla, with a long palate of dark berries and fine tannins that carry an ironstone, graphite line.

This young wine will reward patience. If opening it soon, decant and serve at 16 to 18 degrees alongside beef Wellington, braised short ribs or hard cheeses.
