Cacciucco alla Toscana (Tuscan Seafood Stew)

Ingredients:

  • 300g mixed seafood (mussels, clams, squid, shrimp)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red chili, chopped (optional)
  • 1 can (400g) chopped tomatoes
  • 1/2 cup dry white wine
  • 1 slice of stale bread per person
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions:

  1. Heat olive oil in a large saucepan and sauté onion, garlic, and chili until soft and fragrant.
  2. Add the chopped tomatoes and white wine. Simmer for 15 minutes to develop the sauce.
  3. Add the seafood and cook gently for 5-7 minutes, until all seafood is just cooked through.
  4. Season with salt and pepper, sprinkle with fresh parsley, and serve hot over slices of toasted bread.
  5. Pair with a glass of Frescobaldi Pomino Bianco to highlight the wine’s crisp acidity and citrus notes.
