Herb-Roasted Chicken with Wild Mushrooms
Ingredients:
- 4 chicken thighs (skin-on, bone-in)
- 300g wild mushrooms, cleaned and sliced
- 1 medium onion, thinly sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- Salt and pepper, to taste
- 1/2 cup chicken stock
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 190°C.
- Season the chicken thighs generously with salt and pepper.
- Heat the olive oil in an ovenproof skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5–6 minutes until the skin is crispy, then flip and sear the other side for 3 minutes. Remove the chicken and set aside.
- In the same skillet, add the butter, then sauté the sliced onion and minced garlic until softened, about 2 minutes.
- Add the wild mushrooms, thyme, and rosemary, cooking for another 3–4 minutes until the mushrooms start to release their moisture.
- Return the chicken to the skillet, pour in the chicken stock, and bring to a simmer.
- Transfer the skillet to the preheated oven and roast for 20–25 minutes until the chicken is cooked through and tender.
- Remove from the oven, squeeze lemon juice over the dish, and garnish with freshly chopped parsley.
