Garagiste Merricks Cuvée de Coeur Sparkling 2018 Disg. Oct 2021

Garagiste Merricks Cuvée de Coeur Sparkling, disgorged in October 2021, is a Mornington Peninsula Blanc de Noirs made by the traditional method.

Mornington is better known for still Pinot and Chardonnay, which is part of what makes this bottling worth attention. Fruit for the base comes off the Merricks vineyard roughly a fortnight before the table wines are picked, then goes slowly to press as whole bunches and straight to old barriques, fermenting on wild yeast with no temperature control and resting eight months on full solids. This is the second disgorgement of a generous 2018, with 36 months on lees, a full year longer than the first release. The dosage dropped accordingly, to 1.75 grams per litre.

Red-fruited and dry, with strawberry, citrus and a bready leesy undertone. Acidity drives it, the mousse is fine, the finish clean. Serve cold, around 8 degrees, with fritto misto, freshly shucked oysters or a wedge of aged cheddar.
