Insalata di Arance e Finocchio (Sicilian Orange & Fennel Salad)
Ingredients:
- 3 large oranges, peeled and sliced into rounds
- 1 fennel bulb, thinly sliced
- 1/4 small red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 tbsp red wine vinegar
- Handful of black olives (optional)
- Salt and cracked black pepper, to taste
- Fresh mint or fennel fronds, for garnish
Instructions:
- Arrange orange and fennel slices on a serving platter. Scatter red onion and olives over the top.
- Whisk together olive oil and red wine vinegar, then drizzle over the salad.
- Season with salt and pepper, and garnish with mint or fennel fronds.
