Hoddles Creek Estate Syberia Chardonnay 2021

Hoddles Creek Estate Syberia Chardonnay is a hilltop single-block Chardonnay from a tiny 2021 crop.

Deer got into the block in 2021 and cut an already meagre crop by a further 40 per cent, leaving just 300 kilograms of fruit per acre. The plot, planted in 2006 at the highest point of the property, runs its rows east to west so the sun hits the canopy and not the bunches, which stretches ripening out. Ask Franco d'Anna how his Chardonnay has evolved and the answer is bracing: "It hasn't really changed in 25 years," he says. "I had no idea how to make Chardonnay when I started, and I make it the same way now: pick it, press it, leave it on solids, rack to barrel and let it go." Seven months in old oak, then a long rest in bottle.

Concentrated by those tiny yields yet light, chiselled and lithe in the classic style of this block, with lemon, sea salt and white pepper. Serve at 11 degrees. Sashimi, grilled prawns or roast chicken with lemon and thyme.
