Ingredients (Serves 4):- 400g fresh tagliatelle
- 2 lemons (zest and juice)
- 50g Parmesan cheese, grated
- 2 tbsp butter
- 2 tbsp olive oil
- 1/2 cup cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cook the Pasta: In a large pot of salted boiling water, cook the tagliatelle until al dente. Reserve 1/2 cup of pasta water before draining.
- Prepare the Sauce: In a large pan, melt the butter over medium heat. Add the olive oil, lemon zest, and juice, stirring until fragrant.
- Add Cream and Parmesan: Stir in the cream and Parmesan cheese, cooking until the sauce is smooth. Season with salt and pepper to taste.
- Toss the Pasta: Add the cooked tagliatelle to the pan, tossing to coat. Use the reserved pasta water to adjust the consistency if needed.
