Jim Barry The McRae Wood Shiraz Cellar Release is a classic Clare Valley Shiraz, held back by the winery and released with several years of bottle age.

The Barry family set out to make wines that improve over time, and cellar releases like this let buyers taste McRae Wood after it has begun to settle. The fruit comes from the family's McRae Wood vineyard. Dark forest fruits and a hint of spiced dough lead the nose, with blackberry compote and lightly spiced vanilla on the palate. There is a deep, brooding core and a satisfying texture, and it still has plenty of life ahead.

Best served at around 16 to 18 degrees after half an hour or so in a decanter. Pair it with a peppered steak, lamb shanks or a rich beef and red wine casserole.
