Joh Jos Prüm Graacher Himmelreich Riesling Auslese is a sweet Mosel Riesling from the slate slope above Graach, the racier of the estate's two principal sites.

Himmelreich runs along the hillside between Graach and Wehlen on grey-blue Devonian slate, and it has been one of the core holdings of Joh. Jos. Prüm for a century, alongside Wehlener Sonnenuhr and Zeltinger Sonnenuhr. At Auslese level the estate's shift is more about intensity than sweetness. The fruit is picked later from riper bunches with virtually no botrytis, so the wine stays pure, fresh and finely drawn while gaining depth, flesh and persistence over the Spätlese. The site differences are vivid: Graach shows a racier, more citrussy and herbal profile against the rounder, deeper, stone-fruited Wehlen. Fermentation is long and cool in the estate's cellars, natural sugar is retained and alcohol stays low, which is why these wines feel poised and digestible rather than rich.

Tempting immediately, but the category gains a different dimension with age. Serve at 8–10°C with schnitzel, game bird, terrine or a savoury tart.
