Joh Jos Prüm Graacher Himmelreich Riesling Auslese is a half-bottle of Mosel Auslese from the slate slope above Graach.

Graacher Himmelreich is the largest of the Joh. Jos. Prüm holdings, a broad, steep face of grey-blue Devonian slate, and it gives the racier, more citrussy and herbal side of the estate's range. Auslese here means later picking and riper fruit; the shift from Spätlese is one of power, flesh, complexity and length rather than sweetness alone, and the style remains pure and ultra-fine. Vineyard differences show more clearly at this level than at any other. The winemaking is unchanged from top to bottom of the range — slow, cool fermentation, natural sugar retained, low finished alcohol and unhurried bottling — and the half-bottle simply makes the wine easier to open on a weeknight.

Drinking well already and capable of decades. Serve at 8–10°C with pork, roast chicken, sausage or a light fruit-based dish that is not too sweet.
