Description
Graacher Himmelreich Spätlese is the rounder, more generous of Joh Jos Prüm's two Middle Mosel Spätlesen.
Himmelreich sits above the village of Graach, immediately upstream of Wehlen, on grey Devonian slate with a deeper soil profile than the neighbouring Sonnenuhr. The extra depth holds water better in dry seasons and tends to give a broader, riper wine, a little richer in fruit and slightly less taut than the Wehlener bottlings, though the acid backbone is still very much there. The estate, based at Wehlen and led by Dr Manfred Prüm with his daughter Katharina, treats every site the same way in the cellar: several selective picking passes by hand, whole-bunch pressing, long cool fermentation with wild yeasts in stainless steel, no oak, and bottling with the residual sugar the ferment leaves behind. Wines are then held at the estate and released well after most of the region, because they are built for the long term rather than early drinking.
Give it three or four years at least; it will hold for two decades or more. Good with roast pork, smoked trout or a fruit tart; serve at 8-10°C.
