Description
The Wehlener Sonnenuhr Spätlese is the wine most people think of first when they think of Joh Jos Prüm.
The Sonnenuhr rises steeply above Wehlen on blue Devonian slate, its 1842 sundial giving the vineyard its name, and the Prüm family holds one of the largest and best-placed parcels on the slope. Spätlese, the late-harvest rung of the German Prädikat ladder, is where the site's balance of ripeness, delicacy and acidity is seen most clearly: alcohol stays low, the sweetness is fully natural, and the finish is long rather than heavy. The estate at Wehlen has been run for more than half a century by Dr Manfred Prüm, latterly with his daughter Katharina, and the winemaking is deliberately conservative. Grapes are picked selectively by hand over several passes, whole bunches are pressed, fermentation proceeds slowly with ambient yeasts in stainless steel and stops of its own accord, and the wines see no wood before bottling and a long rest in the estate's cellars.
It needs a few years to knit together and will run for thirty. Serve with cured salmon, roast pork or blue cheese at 8-10°C.
