Joh Jos Prüm's Auslese from the Zeltinger Sonnenuhr, a naturally sweet Mosel Riesling from steep slate above the village of Zeltingen.
Auslese in Germany denotes fruit selected at a higher ripeness than Spätlese, picked bunch by bunch and, on the Mosel, usually fermented to leave considerable natural sugar balanced by very high acidity. The Zeltinger Sonnenuhr is among the steepest and stoniest of the Middle Mosel's classified slopes, and its wines from this estate tend to be firmer and more overtly mineral than those from Graach or Wehlen. Joh Jos Prüm, at Wehlen, has been directed by Dr Manfred Prüm for more than fifty years, latterly with his daughter Katharina. The approach is deliberately unchanged: hand harvesting in repeated passes, whole-bunch pressing, long cool fermentation with ambient yeasts in stainless steel, no wood at any stage, and bottling with the natural residual sugar of the must. Bottles are held back at the estate and released considerably later than most, which is part of why the wines age as they do.
It will need a decade to unwind and should hold for thirty years. Good with fresh fruit desserts, ripe cheese or Thai and Sichuan cooking; serve at 8-10°C.
