Joh Jos Prüm Zeltinger Sonnenuhr Riesling Auslese 2022

Joh Jos Prüm Zeltinger Sonnenuhr Riesling Auslese is a naturally sweet Mosel Riesling from the steep blue-slate sundial slope at Zeltingen.

The Zeltinger Sonnenuhr rises directly above the river on the left bank, its blue Devonian slate and sundial marking one of the middle Mosel's classic sites; it gives Riesling more firmly structured and saline than the softer Graach and Wehlen slopes. Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar. At Auslese level the step up from Spätlese is one of power and flesh rather than sugar alone, bringing more concentration and length while the piercing acidity and modest alcohol of the Mosel keep the wine light on its feet. Prüm's wines are reticent when young and are made to be kept.

Drinkable now, but decades of cellaring will do it more good; serve at 8-10°C with roast pork, game birds, ceviche or a spread of Cantonese dishes.
