Zeltinger Sonnenuhr Spätlese comes from the neighbouring village to Wehlen, where the Prüm family also owns part of a sundial slope.
Spätlese sits a step above Kabinett in the German Prädikat scale, made from later-picked, riper fruit. At Joh. Jos. Prüm in Wehlen the wines at this level remain light in body, but flavour intensity and depth of character rise markedly, and the extra ripeness reads as flesh and power rather than as obvious sweetness. The estate has been run on the same principles since 1911, now by Katharina Prüm: fruit from steep Devonian slate slopes above the Mosel, hand-picked in multiple passes, spontaneously fermented, and bottled with natural residual sugar balanced by the razor acidity these sites give. Katharina Prüm regards Spätlese as the most versatile category the estate makes at the table, and the balance between elegance, freshness and slate-driven savouriness is where its reputation rests. Zeltinger Sonnenuhr adjoins the Wehlen slope on the same stretch of river and tends to give the more savoury, slate-driven of the estate's Spätlesen.
Thrilling already and will gain depth for decades. Serve at 8-10°C with roast pork, smoked eel, spiced Asian dishes or a plate of washed-rind cheese.
