Jonathan Didier Pabiot Pouilly-Fumé Léon, in half-bottle, is an assemblage of mature vines drawn from the estate’s three main soil types.
Pouilly-Fumé runs across three distinct soils — caillottes, terres blanches and silex — and Léon, formerly bottled as Florilège, is Pabiot’s attempt to bring all three into one wine. The lieux-dits are Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot, all densely planted at 10,000 vines per hectare and cropped at around 30 hectolitres per hectare to build depth. The winemaking is more intricate than for the estate’s other cuvées: 80 per cent of the crop was fermented and raised in concrete cuve and stainless steel, with 20 per cent barrel-fermented juice blended in for complexity. The wine then spent at least 12 to 18 months on lees to build texture while holding its brightness, and finished at a moderate 13 per cent alcohol. This is the 375ml bottle.
Drinking now and over the next three to four years. Serve at 10-12°C with grilled fish, oysters or a fresh goat’s cheese.
