Risotto al Limone (Lemon Risotto)
Ingredients:
- 1 cup Arborio rice
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1/2 cup white wine
- 4 cups chicken or vegetable stock, heated
- 1 lemon, juiced and zested
- 50g grated Parmigiano Reggiano
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a pot over medium heat. Sauté the onion and garlic until softened.
- Add Arborio rice and toast for 2 minutes, stirring frequently.
- Deglaze with white wine, stirring until absorbed. Gradually add the heated stock, one ladle at a time, allowing it to absorb before adding more.
- Once the rice is tender and creamy, stir in lemon juice, zest, butter, and Parmigiano Reggiano. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
