Description
Lambert Chardonnay is a taut, mineral Chardonnay grown high on the granite of the Yarra Valley's Denton vineyard.
The block sits high enough that the granitic topsoil is barely there, and that thinness is the difference between this and the Crudo bottling grown lower down the hill. Clone 95 is early and small-bunched, so canopy work and picking dates matter more here than anywhere else on the property. Bunches went to the press whole, fermented on their own yeasts and settled into a 2,000-litre foudre, where Luke Lambert gave the lees a little more work than usual to pad out a very citrusy frame. Granite shows up in the glass as gun-flint and wet stone; he has said for years that Denton speaks loudest through Chardonnay.
Lemon, grapefruit pith and crushed stone, cut fine and long, with the lees work reading as texture instead of weight. Drink it at 11 to 13 degrees. It handles sashimi, oysters, a chicken and leek pie, or raw kingfish with olive oil.
