Description
Lambert Crudo Chardonnay is the lower-slope Denton bottling, wild-fermented and put into bottle without fining or filtration.
Twenty years in granitic sand over granite boulders has given the vines on Denton's east-northeast face a settled hand, and moving his Chardonnay sourcing here is the clearest step up Luke Lambert has made with the variety. He says the granite reads most plainly in the whites, and it is hard to argue. Bunches are pressed whole and left to ferment on native yeast with no cooling, malolactic runs to completion, and the wine spends three to four months in a 2,000-litre French foudre before going into bottle unfined, unfiltered and with a minimum of sulphur. Nothing is added to flatter it.
Spring-fresh, with pure white peach and pear, white flowers and a deep stony seam. The palate flows instead of pushing, finishing long and seamless. Around 11 degrees suits it. Serve with steamed snapper, prawn risotto, roast chicken or a bowl of mussels.
