Lambert Crudo Rosé 2021

Lambert Crudo Rosé is a dry, savoury Yarra Valley rosé made entirely from Syrah.

Picking early is the whole strategy: the Denton Syrah comes in with acid intact and colour barely extracted, goes straight to the press as whole bunches, and the cloudy juice is run to tank for a wild ferment followed by a wild malolactic. Storage is a 4,000-litre French oak foudre, which gives breadth without any oak flavour, and bottling happens unfiltered with minimal sulphur. A long, slow growing season in 2021 lent extra perfume and subtlety. Luke and Rosalind Lambert treat this as a serious wine, not a by-product, and the granite site shows through.

Talc, river stone and wild strawberry, dry and quite savoury, with a chalky pull at the end. Serve well chilled, 8 to 10 degrees. It works through a long lunch: charcuterie, a salad of tomatoes and basil, grilled quail, or fish tacos.
