Laughing Jack Jack's GSM 2021

Laughing Jack Jack's GSM is a Barossa red in which Grenache leads and Shiraz and Mourvèdre fill in behind.

Each grape has a job in a blend like this. Grenache, at 62 per cent in 2021, brings the red fruit and the lift; Shiraz at 22 supplies flesh and a darker tone; the 16 per cent of dry-grown Mourvèdre off Moppa adds the savoury grain that keeps it from sweetness. All three are handpicked from own-rooted, low-yielding estate vines, Moppa Hill planted in 1962 on ancient sand over reddish-orange clay and Greenock on deep red earth, both farmed on organic lines. Parcels ferment separately as whole berries, free-run and press portions age apart, and blending waits until sixteen months in seasoned French puncheons are up.

Perfume first, then a seductive, spicy palate with red and dark fruit in equal measure and gentle tannin holding the line. It drinks well above its price. Serve at 16 degrees, with slow-cooked lamb, sausages and mash, or a mushroom and barley risotto.
