Laughing Jack Jack's Shiraz 2021

Laughing Jack Jack's Shiraz is a Barossa Shiraz built from three sub-regional parcels.

Soil does most of the talking in the 2021: red-brown earth over deep red clay at Greenock, which is 67 per cent of the blend; clay and shale at Marananga at 17; and sand over clay and quartz with ironstone at Moppa for the last 16. Each contributes something different, and together they give the wine its shape. All the fruit was destemmed and split across three, five and eight-tonne open-top fermenters, plunged by hand twice a day, then matured twenty months in oak, a few per cent of it new and the rest seasoned French and American.

Dark-fruited and spicy, with a full, smooth palate and a long, flavoursome close. South Australian Shiraz done properly and priced kindly. Serve at 17 degrees. Match it with barbecued beef, lamb cutlets, a beef and mushroom pie or hard cheese.
